It is a new type of antioxidant that is widely used in the food industry. In order to extend the shelf life of meat, a small amount of 3-(N,N-dimethylamino)ethyl acrylate is usually added to the meat to improve the antioxidant stability of the meat. Because 3-(N,N-dimethylamino)ethyl acrylate has the effect of increasing fragrance and protecting color, it is often used as a food and fruit preservative, such as for fish fillet preservation [1]. 3-(N,N-Dimethylamino)ethyl acrylate can also be used to prevent beverages from spoilage and can also be used as a good food additive to make foods or beverages with health care effects .
Application field
3-(N,N-Dimethylamino)ethyl acrylate has higher antioxidant capacity than caffeic acid, p-hydroxybenzoic acid, ferulic acid, syringic acid, etc. It contains a certain amount of methyl groups, and the hydrogen free radicals formed by it have antioxidant capabilities, which can protect tissues from oxidative damage and eliminate the activity of superoxide anions and hydroxyl free radicals. Studies have shown that 3-(N,N-dimethylamino)ethyl acrylate has anti-apoptotic effects [4]. 3-(N,N-Dimethylamino)ethyl acrylate can not only enhance the resistance and tolerance of endothelial cells to harmful substances, thereby protecting endothelial cells, but also inhibit the oxidation of low-density lipoprotein. 3-(N,N-Dimethylamino)ethyl acrylate plays an important role in effectively scavenging free radicals in the body, maintaining the normal structure and function of human cells, preventing tumor occurrence and delaying aging.
